Cornmeal

 

CORNMEAL COATED CHICKEN NUGGETS



I have found the best coating ever for Chicken Nuggets




Ingredients

  • Cubed chicken breast
  • Flour for coating
  • Egg for coating
  • Cornmeal
  • Seasoning for the Cornmeal ~ e.g. garlic salt or freshly ground garlic - herbs or lemon powder - all spice or chilly powder - or simply salt and lots of black pepper ~ 


Preparation
                           Coat the chicken pieces in flour (any)
     
 
 
Then coat them in egg
 
 

 
 
Then coat them well in seasoned cornmeal 
 
 
 
 
Fry in hot oil until golden brown
 
 
 
 
 
Drain and enjoy them with Sweet Chilli dipping sauce

Chocolate Cup Cakes

Just made some Chocolate Cup Cakes using a strange recipe but they came out so moist.
 



A bit of enhanced editing here.
 
I altered the original recipe as I went along.
 
(I'm always experimenting with different recipes)
 
 
 
  • 1 1/2  Cups Milk  (I used undiluted Evaporated Milk)
  •  
  • 100 grams Melted Butter
  •  
  • 1 Beaten Egg
  •  
  • 1 Cup S.R. Flour  (I used 1/2 White and 1/2 Wholemeal Self-Raising)
  •  
  • 1 Cup Sugar  (I used 1 Cup of Golden Syrup)
  •  
  • 1/4 Cup Oil  (I used  Virgin Coconut Oil which lowers cholesterol)
  •  
  • 1/2 Cup Cocoa Powder  A Good Quality One
  •  
  • 1/2 Teaspoon Bicarbonate Soda 

Mix everything together ~
Divide between 2 cake tins or multiple bun tins ~
Recipe states to bake at 180 c ~ 350 f
but I used a lower temperature of 160 c ~ 320 f (Fan oven)

It really depends on your oven ~
 
 
For the Genache
 
2 Level Tablespoons Full Cream, Dried Milk Powder  - I use Dried Goats Milk
 
2 Heaped Tablespoons Cocoa Powder  - A Good Quality One
 
50 grams melted Virgin Coconut Oil
 
Icing Sugar / Powdered Sugar ~ 1/2 - 1 cup  (according to taste)
 
2 - 4 Heaped Tablespoons Whipped Double Cream / Heavy Cream
 
 
  • Melt the Coconut Oil and let it cool down a bit.
  • Sift the dry ingredients and blend with the cooled oil.
  • Add the whipped cream and stir well 
  
      Can be served warm and runny or cooled and half set ~
      Either way it's stunning

 
These are by far the softest, moistest Chocolate cakes I have ever made.
The longer they are left the more moist they become and the Genache is absolutely heavenly with them.
The ingredients can be adjusted to suit personal taste but you must use FULL CREAM dried milk

MINI OVEN


My Beko DV555 is just about ready for the "White Goods Home In The Sky".

It's too ill to go much further.

It's symptoms are :-

  • Broken Top Oven Element
  • Broken Grill Element
  • Broken Door Hinge
  • No main Door Seal
  • No Top Oven Door Seal

I have got a joint of Pork in the main oven now and even though the heat is escaping, it will cook fine but I miss having TOP HEAT as from a Grill and the option of a smaller Top Oven so I decided to buy a Mini Oven which sits on top of my worktop/counter top and do you know - IT'S GREAT!

Just the job for my 2 teenagers and myself (after I manage to train them with the new toy).

  • 5-position temperature control
  • temperature range: up to 230 °C
  • with convection function for perfect, even cooking and baking results
  • 60 minute timer with buzzer at the end of the selected cooking cycle brushed stainless-steel housing

  • ARRIVED QUICKLY

    Coconut Oil Cure !


    My son's off school today with bad chest, ear, nose and throat.
    It's a problem with a long history.
    The last time I took him to the Doctors he was given antibiotics.
    The symptoms never cleared up properly.
    He has been coughing up thick mucus since August last year (2013).

    Strong medicine and herbal remedies don't do anything but this morning I received my usual e-mail from Coconut Oil UK and as I have already started using it I was interested to read the article . . .

    It comes as a solid so I melted a spoonful and urged him to brave it. He didn't like it but down the hatch it went.
    Of course one spoonful didn't cure him, but it has definitely had a positive affect on him.
    He's hardly coughed all morning.

    I am going to keep the Doctors appointment and see what they have to say ~ no harm in that ~ but I'm sure that introducing Coconut Oil and other Coconut Products into our diets on a regular basis will show results.

    Dehydrated Healthy Snacks


    My successful Food Dehydration has resulted in an abundant supply of healthy, snacks. It's my vitamin box for all passers buy.                 


    I DID promise a second video but unfortunately my family and I ate the results !

    Food Dehydrator

    WOW !

    Over the moon with my new Food Dehydrator. Had to wait long enough for it.
    Thought it had got lost in the post.

    Only managed to complete one Video so far but the results will be on Video 2 soon.

    For the first experiment I peeled some red potatoes, washed them and sliced them in my Food Processor then laid them out neatly onto the 5 tiers which make up the Dehydrator.
    The instruction Booklet which came with my Dehydrator provides very few suggestions so I started by trial and error and the first error was my anticipated time for drying. Everything has such different drying times and depends on several factors.

    So far I have dried
    Potatoes for Potato Chips (seasoned with home-made chilly Powder )
    Apples
    Red Onions
    White Onions
    Spring Onions
    Garlic
    Banana

    I forgot to BLANCH the spuds so they did go a bit discoloured but they also went rock hard rather than crispy - which created an interesting texture.
    Then I mixed ALL of it together except for the Garlic. which I have kept separate but the MIX I have made is gorgeous.
    It makes a brilliant low-calorie snack.

    I reckon that you could just keep adding and adding to the original mix and just keep topping up with variations ALL the time and have a really healthy, low calorie continuous supply.

    The Red Onions seem to be a favourite with EVERYONE who has tried the mix.
    They are not overbearingly oniony - instead they have a subtle desirable sweetness which enhances any mix.
    That and the dried Gala Apple Chips, which were just about destined for the compost heap.

    One reason I purchased a Food Dehydrator is because I am sick of throwing food in the rubbish bin or compost bin. This is a fantastic way to prevent that from happening.
    Don't get me wrong, if something has obviously perished, it WILL be binned but the idea is to stop it getting that far.
    For me OVER ripe = fermentation/yeasted and that's not good for anyone, especially with me and my food intolerance.

    Coconut Rice Recipe



    COCONUT RICE RECIPE



    Cook time: 45 minutes / serves 12

        * 2 tablespoons virgin coconut oil
         * 3 cups brown rice
         * 6 1/2 cups water
         * 1 fresh lime
         * 1/2 cup dried unsweetened toasted coconut




    Heat coconut oil and rice in pan until rice darkens in colour, stirring constantly.
    Pour in water 2 cups at a time.
    Leave uncovered on high heat to boil.
    When rice has swelled cover pan half way and let cook for 10-15 minutes.
    Then cover pan entirely, turn on low, and let simmer until rice is tender.
    Fluff with fork and squeeze lime on top.
    You may add some butter on top as well if you like and garnish with toasted coconut.
    Serve with chicken or fish.

    Today is the start of my new Blog ~ FOOD FUN ~ and in an effort to deal with severe Food Intolerance, I have just bought this ~ FOOD DEHYDRATOR ~ but can't comment just  yet as it hasn't arrived yet.
